This rare and highly valued honey is made from the sap of Black Beech trees. It involves a unique relationship between aphids, fungi, and honeybees.
The process starts when aphids feed on the tree's sap, extracting nutrients like proteins and vitamins. They then excrete a special, nutrient-rich liquid called honeydew, which contains minerals, enzymes, sugars, and other beneficial compounds.
This honeydew forms tiny droplets on the outside of the tree, which honeybees collect. The bees then process and turn this honeydew into honey.
